Broccoli and Cheese Soup in the Instant pot

Another day, another soup. 😊 Soup is my favorite food and I don’t discriminate. This is one of our favorites and super easy to make, especially if you have an instant pot!

  • 2 large heads of broccoli (cut up)
  • 3 carrots (sliced)
  • 1/2 stick of butter
  • 1/2 onion diced (I use a couple tablespoons of dried onion when I don’t have fresh)
  • 2 cups of chicken stock
  • 2 tablespoons of flour
  • 2 cups of milk
  • 2-4 cups of water (depending on how thick you want it to be)
  • seasonings to taste (I used salt, pepper, celery salt, and garlic powder)
  • 2 cups of cheese

Saute the butter and flour in the instant pot. Add the milk and whisk. Add all other ingredients except the cheese. Secure lid and set to manual for 10 minutes. Quick release. Stir in the cheese. *I choose to use the immersion blender and blend it until smooth, but you can eat it without blending if you like the chunks of broccoli and carrots. I’ve had it both ways and its delicious!

This is a family favorite of ours! It’s cheesy and creamy, but you don’t feel as bad since it has vegetables in it. 😉 You can very easily convert this to a crockpot or stovetop if you don’t have an instant pot. Plus, it’s easy and delicious!
